It is prepared by blending small onions, garlic and tamarind to a pulp with cumin seeds and red chilies. The pulp is then cooked with a hint of gingili oil and seasoned with curry leaves and mustard seeds. Quercetin, a powerful compound found in onions, has been suggested to play a role in preventing cancer, especially stomach and colorectal cancers. The flavonoids in onion, which are responsible for many of the health benefits, are usually more concentrated in the outer layers of the bulb.
